The purpose of wine and food pairings is “to drink wine as wine was meant to be,” we are told at an LVMH-hosted dinner at Yu Lei in Okada Manila. This philosophy comes from wine history dating back to the 17th century, a time when wine was commonly enjoyed with food, as wine was storable, considered a ‘hygienic drink,’ and drinking water was scarce in European cities.

And so we began the feast with chef Mikiya Imagawa’s culinary creations alongside Moët Hennessy’s finest wines, which are cultivated from its award-winning winery, the great Terrezas de los Andes.

The Terrezas de los Andes winery is based in Mendoza, Argentina, and is Moët Hennessy’s first-ever subsidiary vineyard outside of France. Located at the foothills of the Andes, it takes its name from the ‘terraces of the vineyards,’ which range from 800 to 3,000 meters, allowing for high elevation grape cultivation—an essential in the making of fine wines.

Argentina’s wine region is unique compared to rest of the world because of its high altitude and ideal climate conditions. It favors the accumulation of aromatic and flavor components that make up the color, body, and structure distinctive of fine wines. Terrezas de los Andes was also named “Argentine Wine Producer of the Year” at the International Wine & Spirits Competition Banquet in London last year.

Beginning the five-course feast is Imagawa’s signature appetizer set: rice paper rolled vegetable with mustard sauce, whelk in XO sauce, wok friend octopus with crispy garlic, and watermelon bamboo and salmon roll with lemon sauce. This is served with the Terrazas Reserva Torrontes 2017, a light-flavored concoction that boasts a tropical aroma, hints of fruity notes, and a refined finish.

This is followed by a serving of the light and savory boiled lobster and shredded vegetable salad with black pepper sauce that’s delicious and refreshing, paired with the Terrazas Reserva Chardonnay 2018, an oak barrel-aged wine with toasted and smoked notes, described as a wine of great amplitude and vivacity. In contrast to the dish, the chardonnay was robust and strong in taste.

The third dish is the oven-baked soy chicken and paprika with sweet five spice sauce, complemented with a glass of Terrazas Reserva Malbec 2017, fine red wine notable for its freshness and juiciness, intense taste, and spicy and mentholated aroma.

The most indulgent one of all, the wok-friend wagyu and foie grass in black miso sauce served with fried eggplant, is paired with two wines: the Terrazas Single Vineyard Malbec 2015 and the Terrazas Single Vineyard Cabernet Sauvignon 2013.

These wines are strong, robust, and rich in body and taste, bringing out the juiciness and flavor of Imagawa’s tender beef dish. LVMH heritage brand ambassador Clemence Dufeu highlights the exceptionality of single-vineyard wines. Its premium comes from the fact it is derived from the same vineyard, indicating an untarnished, distinct, and flavor-rich taste.

Last but not least is the dessert: Bitter chocolate and dragon beard candy with coffee-flavored nuts, best enjoyed with a glass of premium Scotch whisky— the Glenmorangie Signet, full-bodied, strong and powerful in taste. Dufeu points out that this is ideally served last, with chocolate or sweets, as its profile contains hints of caffeine, always the perfect ending to a meal.
