Jordy Navarra's Toyo Is Miele's One to Watch for 2018 at Asia's 50 Best Restaurants Awards

The year will be one for the books for Filipino chef Jordy Navarra. The 2018 recipient of the coveted Miele One to Watch award, his restaurant, Toyo Eatery, was chosen by the people behind Asia’s 50 Best Restaurants in collaboration with its regional experts. Given to a restaurant that is outside the year’s 50 Best List, the award is meant to highlight the region’s rising star.


Navarra tells Town&Country, "We feel very honored. [It was] such a pleasant surprise. It's just humbling for us that people appreciate our work, sort of like reinforcement from everyone that we're on the right track."


Inside Toyo Eatery


Navarra is set to formally receive the honor on March 27, in Macau.

Located in The Alley at Karrivin Plaza, Toyo Eatery is known for elevating everyday local ingredients through refined techniques. It was this distinct take on Filipino cuisine that caught the attention of William Drew, the group editor of Asia’s 50 Best Restaurants. “With a menu celebrating local culture and traditional dishes, chef-owner Jordy Navarra is a young talent who is advancing the cuisine with creative flair and a progressive approach, but also with precision and attention to detail,” Drew said in a statement.


Earlier this year, Navarra represented the country as the first Filipino speaker at Madrid Fusion in Spain with his presentation “The Wild and Untamed Flavors of the Philippine Islands.” Here, he talked about the nuances of fermentation particular to Filipino cuisine, focusing largely on buro and bagoong. Only weeks before his Madrid Fusion stint, Navarra and his partner Richie Manapat opened the now cult-favorite Panaderya Toyo, a bakery that offers a range of freshly-baked breads and the duo’s take on Filipino ‘palaman.’
