Much has evolved behind the scenes of this restaurant by day, watering hole by night establishment. There are definitely fresh ideas brewing, as former sous chef, now head chef Josiah Alexis Sanga has taken over the kitchen. He began this new era of 210 by revamping the menu a couple of months back. Inspired by his travels and his experiences working with the acclaimed Jean-Georges Restaurants, Sanga has brought his knowledge of French techniques and Asian flavors to the foreground, adding his own luxurious twists to commonplace food items such as burgers, pasta, and fried chicken.

BCN by Rambla


If Rambla serves up Spanish food attractions like paella, its littler sister BCN takes the road less traveled with more obscure offerings. This contemporary dining space named after the airport code of Barcelona is the place to get your unpretentious tapas fix on a special night out. Perhaps one of its highlights, aside from the small plates, is the well-stocked cellar that houses about 100 labels of Spanish wine, personal favorites wrangled up by co-owners Uri Singla and Dani Aliaga. If you have trouble deciding, the in-house sommelier will gladly offer his knowledge. Some of the crowd-pleasers include the Arroz de Bogavante a La Parrilla with grilled lobster, and the BBQ Costillar de Cerdo Iberico, marinated ribs made from Black Iberian Pig.

The wave of Hong Kong-based establishments entering Manila does not seem like it’s going to die down anytime soon. The recent arrival of CHINO, Hong Kong’s much-lauded Mexican joint, is a testament to that trend. Behind the kitchen is chef and owner Erik Idos, a Filipino who grew up in California.

What’s special about CHINO is that it marries Japanese ingredients and techniques with Mexican recipes, and you can taste and see this unlikely combination in some of its tacos—a light tortilla topped with crispy fish, or topped with wagyu beef and Japanese mayo.

Cirkulo

Another one of chef J. Gamboa’s culinary contributions to the Manila dining scene, Cirkulo has become an institution for Spanish cuisine, being the first to offer tapas and sangrias to Manila in 1995. While many Spanish restaurants have come and gone, Cirkulo proves to be unfazed by the trends, and it might have to do with the meticulous attention to details provided by brother and sister duo J Gamboa and Malu Gamboa Lindo. Since 2007, Elbert Cuenca’s namesake steakhouse has been a quintessential fine dining spot nestled along H.V. de la Costa Street in Salcedo Village. Its specialty lies in preparing USDA-certified premium meat, which its chef cooks to perfection and which can easily be enjoyed on its own. The premium meat is painstakingly prepped days before, when it first undertakes a slow-defrost process for 24 hours, it is later pre-cooked, wiped down, cooked in a broiler for 30 minutes, and served hot after resting. In contrast to Boutwood’s Savage, which sits just one floor above, Helm is a streamlined 10-seater restaurant that permits front row seats for an intimate group of diners to watch the seasoned chef prepare their meal. Boutwood uses locally sourced ingredients, which he keeps displayed in clear jars on a nearby shelf. Boutwood certainly does not scrimp on ingredients, nor does he hold back on the intricacy put into each dish, which he plates elegantly. The entire affair is a feast for the eyes, as it is for the tastebuds.

Kazunori


From the people who brought us Mendokoro and Yushoken comes this three-part dining concept that highlights Japanese cuisine. Quirkily located within a Mazda showroom, Kazunori gives its diners a casual-cool experience with its industrial interiors that feature wood accents and dusky furniture. The restaurant has an appealing open-working kitchen in its dining area, but if you’re looking for a more intimate setting, you can dine in the secluded omakase room separated by wood panels. The restaurant even brought in a soba master to hone the preparation of its soba and udon dishes. If you’re looking to treat yourself, order a Saito Special (off-menu) which consists of an indulgent amount of uni, otoro, chuturo, and ikura.

La Cabrera


You could say Carlo Calma Lorenzana and his wife, Julia Quisimbing, brought the Argentinian parilla back home with them as an extraordinary souvenir from their honeymoon, and La Cabrera opened in Makati back in 2014. Argentinian chefs continue to train local chefs from time to time to make sure they are up to par with La Cabrera Buenos Aires. The restaurant exudes coziness with wooden beams in the ceilings and numerous antiques adorning the partially brick walls. The main attraction of the menu is the coulotte picanha steak, which comes with an assortment of side dishes. Another crowd pleaser is the Provoleta, grilled cheese served in a skillet. End the meal with the restaurant’s signature dessert, the Rogel de dulce de leche.

Las Flores


The former owners of Barcino opened Las Flores back in 2012. They kept things trendy with their contemporary interiors and their modern take on Spanish cuisine. Hailing from Cataluña, Spain, the team stood out in a country heavily saturated with Spanish food. Vibrant decorations splashed across the white-washed walls and mismatched chairs make the space look crisp and folksy at the same time. The Trio de Chorizos and the Paella Negra are highly recommended. Top everything off with the Chocolatisimo. Delhi native Ranjit Chimni took his time before finally starting this venture in 2016. Mantra Bistro highlights Northern Indian flavors, heavily utilizing ingredients like tomatoes, ginger, onions, and garlic. At the heart of it all is the restaurant’s use of tandoor, which makes everything all the more authentic. One can never go wrong with classics like vegetable samosas, chicken tikka, and naan.
