For Two Nights Only, an Award-Winning Chef Will Cook Up a Gastronomic Feast at Mireio

French chef Benjamin Collombat of Le Jardin de Benjamin fame will transport your tastebuds to the south of France.

Naming your business after yourself is very telling of how bold a character you are. French chef Benjamin Collombat must be so confident in his own culinary talent that he put his name on his one-Michelin star restaurant Le Jardin de Benjamin in the tourist favorite region of Provence France.

His specialty, French fare, is more challenging than one might think it, given how many contenders have already mastered the cuisine and its complexities.

This rising star gets his edge from training with kitchen superstars—from the likes of Philippe Da Silva who put the Hostellerie Les Gorges de Pennafort on the map and the self-taught Guy Martin, who was awarded his first Michelin star six months after becoming a chef. Following in the footsteps of these masters, Collombat has skillfully made a name for himself.

On the evenings of March 19 and 20, Manila diners will get an exclusive taste of Collombat’s culinary artistry at Mireio at Raffles Makati, which offers a five-course wine dinner for P5,500 per person.

The Menu

The chef starts the evening with an organic sweet prawn tartar with mango and calamansi, condiment enhanced with bergamot. The next course is a play on texture, combining cauliflower with mandarin and white chocolate. Afterward comes the sous vide sea bass with passionfruit butter and cucumber pickles. The entrée is a melt-in-your-mouth beef Wagyu tenderloin lacquered with red berries, Szechuan mashed potatoes, and Yuzu sauce. Finally, dessert comes in the form of L’Exotique, a coconut dacquoise with mango and passionfruit cremeux, coconut foam, and passionfruit sorbet.

Collombat is well-known for using fresh and seasonal ingredients from his native region, which diners will get to experience first-hand on those two evenings.
