180° Shift at William Mahi's Newly-Opened 210° Kitchen + Drinkery
Chef William Mahi is an expert at fine dining but as it turns out, he also happens to be a master of more casual fare, too. Earlier this week, he opened the doors of his new dining room, 210° Kitchen +Drinkery. As its name suggests, this new establishment is quite a departure from his previous, more formal culinary stages, but one that is closest to his true self. Formerly the executive chef at the two Michelin-starred restaurant, Spondi, in Greece, he was most recently at the helm of the kitchen of The Tasting Room at the City of Dreams.

His new menu reveals a very personal take on global cuisine and offers signature creations that reflect his understanding of ingredients as well as his fine culinary technique. Highlights include the Egg, an organic egg cooked sous vide with potato puree; pan seared foie gras, Soulard foie gras served with corn foam and popcorn; and homemade marinated salmon, marinated for 36 hours, garnished with pickles, capers, Parisian sauce, and button mushrooms.

Fished from the Atlantic Ocean, marinated octopus with homemade Ras-El–Hanout, grilled on charcoal, served with cumin sauce and pimentos del piquillos mayonnaise; and salmon marinated for 36 hours, garnished with pickles, capers, Parisian sauce and button mushrooms.

The Drinkery, located on the second level of the space is set to open in February and features not only an extensive cocktail selection but also a sophisticated wine list (also offered in the restaurant) curated by food and beverage director, Damien Planchenault.
“Manila has the incredible potential to be Asia’s next culinary destination. In the two years that I have been here, I have seen the palates of its inhabitants become increasingly discerning. This is the best time and place to present my idea of a perfect dining concept, where my guests will be able to enjoy quality dining at good prices,” explains Chef William.
"I like eating tasty dishes served family style in a relaxed atmosphere. I like drinking excellent wine while I eat. And after a great meal, I like to enjoy cocktails in a place with character and style. This is what I want to offer to Manila.”
Currently on soft opening, the restaurant opens only for dinner and is offering an introductory four-course set menu priced at P1,290.
An a la carte menu is set to be introduced in early February.
