I’ve long been a collector of watches. From Panerai and Rolex to Vacheron Constantin, I enjoy them for their precision and beauty. Time is many things. For me within my kitchens it means a “sense of urgency.” This saying appears above the clocks in all of the kitchens including the Vacheron one in The French Laundry.

I also collect cowboy boots. Lucchese and Justin Boots are my favorites and I still have the pair I wore on the January 2 cover of New York Magazine back in 1989. I wear them to relax and they are a nice alternative to my kitchen clogs.

I like to give presents with a story attached. For chefs, it might be a cookbook with special meaning, one that features a technique they are trying to learn, or a new style of food that interests them. And Regiis Ova sustainably harvested caviar is a new project and venture of mine that I am excited to share with my friends and family.

Culturally, I feel like we are having an unmaterialistic moment. What I really want is time, time is the real luxury. However, I would like to add another addition to my three puppies, so if not more time, then a poodle puppy.

I haven't decided yet but I gave Elsa Peretti bowls last year and I might do that again because they are fantastic. Regime des Fleurs fragrances are also really great—I know Lauren Santo Domingo says to never give candles, but I do think they make for a good gift (maybe not for your loved ones though). When in doubt, licorice from Sockerbit is my favorite.

I have a big collection of jazz cds by Dexter Gordon, Dizzy Gillespie, Illinois Jacquet, and many others I've photographed throughout the years, who are now featured in my new book JAZZ.

I collect antique skull rings, memento mori, and reliquaries. Throughout history many philosophies and religions have posited that meditating on death reminds one of the value of life, promoting better use of one’s time, and encouraging morally directed behavior. In the 18th and 19th century the trend of wearing memento mori jewelry took hold and often the rings and broaches contained woven bits of hair of a departed loved one. They are a bit morbid, but utterly charming.
