Halo-Halo Served at Prestigious Food Awards in New York
Margarita Manzke of Republique in Los Angeles is a semifinalist for the James Beard Award for Outstanding Pastry Chef.

Some of the best food writers, journalists, bloggers, TV hosts, and other food media practitioners in the United States were delighted by Margarita Manzke’s halo-halo with pineapple, coconut tapioca, passion fruit, berries, and leche flan.

Manzke, the pastry chef at Republique restaurant in Los Angeles, prepared the Filipino dessert for the James Beard 2017 Media Awards held earlier this week at Pier Sixty at Chelsea Piers in New York.

Manzke is a semifinalist for Outstanding Pastry Chef for this year’s James Beard Awards.



The black tie gala, hosted by Jesse Tyler Ferguson of Modern Family, will take place on Monday, May 1, at the Lyric Opera of Chicago.

Walter Manzke, chef at Republique LA, and proud husband of Margarita, said his wife was asked to prepare a dessert for the media awards.



“She chose one of her versions of halo to represent her Filipino heritage,” said Walter. “She is delighted that it was so very well received and enjoyed by everyone.”

Walter and Margarita Manzke are co-founders and owners of the group that runs Wildflour, Pharmacy, and Pink’s hotdogs here in the Philippines.

James Beard was an American cookbook writer and teacher who inspired hundreds of professional chefs and food lovers. He died in 1985.

The James Beard Foundation’s mission is “to celebrate, nurture, and honor chefs and other leaders making America's food culture more delicious, diverse, and sustainable for everyone.”
